Fish tacos mayde good with the catch of the day!

For some, winter in Minnesota means doing anything and everything you can to avoid going outside. The subzero temperatures make parking it on the couch in sweatpants sound pretty fabulous. There are, however, the select few that embrace the winter months and look forward to the outdoor activities available December through March. Tony is one of those people. Saturday morning, while I was cozy at home with a cup of warm coffee, he was out on the ice – fishing – for fun!

Anyways, he loves it and it makes me happy that he can find joy even in the most brutally cold weather. It also makes me happy when he is successful on his hunts, which this time he was.  With a few good-sized fillets of Crappie, we decided to make fish tacos. Crappie has a light, white, flaky meat and is not too fishy tasting or greasy.  We battered and fried the fillets then topped them with cabbage, fresh avocado, cilantro, salsa and homemade chipotle mayo. Easy and delicious!

All you need:

  • Fresh fish fillets, white meat
  • Batter mix (we used Shore Lunch Original Recipe Breading)
  • Corn tortillas
  • Cabbage
  • Salsa or pico de gallo
  • Avocado
  • Cilantro
  • Chipotle mayo
