Ah – the New Year is here. An exciting time to look forward, anticipating the events of the year ahead, all the while fighting the aftereffects of the massive quantities of food and drink consumed over the past two weeks. After my champagne buzz wore off, my body was in definite need of some TLC. On top of that, winter decided to pull out all the stops sending us some lovely subzero temperatures. I found myself at work dreaming of something healthy and delicious that would jump-start my health regimen of 2014 but also take the bite off this nasty winter. Then I remembered – tomato, corn and avocado salad. A fabulous little number I discovered a few years back. I usually only make it during the summer but it was exactly what I needed to lighten up my diet and brighten up my January.
